【摘要】:民以食為天,食品安全是人民安居樂業(yè)的基礎(chǔ)。人類歷史上因?yàn)槭称返牟话踩蛩貖Z去生命的事件數(shù)不勝數(shù),從2002年世界衛(wèi)生組織公布的數(shù)字來看,全球每年發(fā)生食源性疾病的病例達(dá)數(shù)十億,并有不斷上升的趨勢,給人民的生命健康帶來了嚴(yán)重危害,食品安全引起了世界各國的重視,成為了全球關(guān)注的熱點(diǎn)。 餐飲服務(wù)是整個食品安全鏈條中最重要的一個環(huán)節(jié),是“從農(nóng)場到餐桌”的最后一個環(huán)節(jié),餐飲業(yè)的食品安全問題不容忽視。餐飲業(yè)食品安全問題關(guān)系到廣大人民群眾自身的身體健康和生命安全,關(guān)系到整個經(jīng)濟(jì)發(fā)展與社會穩(wěn)定,關(guān)系到國家和政府的形象。近年來,國內(nèi)餐飲業(yè)食品安全事件頻發(fā),“地溝油”、“烤鴨油”、“染色饅頭”等事件一次次將餐飲業(yè)食品安全推到風(fēng)口浪尖,餐飲行業(yè)食品安全監(jiān)管問題逐漸成為人們關(guān)注的熱點(diǎn)和焦點(diǎn),完善餐飲業(yè)食品安全監(jiān)管體系也逐漸成為我國食品安全監(jiān)管部門的一項(xiàng)重要內(nèi)容。本文首先對食品安全監(jiān)管相關(guān)理論進(jìn)行闡釋,分析了我國餐飲業(yè)食品安全中存在的問題,通過借鑒國外餐飲業(yè)食品安全監(jiān)管的經(jīng)驗(yàn),完善了我國餐飲業(yè)食品安全監(jiān)管機(jī)制,為政府職能部門的監(jiān)管提供了一些參考.
[Abstract]:People take food as the day, food safety is the foundation of people living and working in peace and contentment.The number of deaths from food insecurity in human history is innumerable. According to the figures released by the World Health Organization in 2002, there are billions of cases of foodborne diseases in the world every year, and there is a rising trend.It has brought serious harm to people's life and health. Food safety has attracted the attention of all countries all over the world and has become a hot spot in the world.Catering service is the most important link in the whole chain of food safety and the last link of "from farm to table". The food safety problem of catering industry can not be ignored.Food safety in catering industry is related to the health and safety of the people themselves, to the whole economic development and social stability, to the image of the state and the government.In recent years, food safety incidents have occurred frequently in the domestic catering industry, such as "gutter oil", "roast duck oil", "dyed steamed bread" and so on.Food safety supervision in catering industry has gradually become a hot spot and focus of people's attention, and improving food safety supervision system of catering industry has gradually become an important content of food safety supervision department in China.This paper first explains the relevant theories of food safety supervision, analyzes the problems existing in the food safety of the catering industry in China, and consummates the food safety supervision mechanism of the catering industry in China by learning from the experience of food safety supervision in the catering industry of foreign countries.It provides some references for the supervision of government departments.
