【摘要】:正日落黃(sunset yellow)又名食用黃色3號,是一種水溶性偶氮類化合物~([1])。由于其化學性質穩(wěn)定、成本低廉、色澤鮮艷、著色力強、配色方便而被廣泛用于食品的加工行業(yè)。研究表明,偶氮類化合物在體內可代謝生成致突變原前體——芳香胺類化合物,芳香胺則可被進一步代謝活化后成為親電子產物與DNA和RNA結合形成加合物而誘發(fā)突變~([2])。另外,偶氮類化合物還可被氧化誘導產生自由基,進而再與體內
[Abstract]:Sunset yellow (sunset yellow), also known as Edible Yellow 3, is a water-soluble azo compound ~ (1). It is widely used in food processing industry because of its stable chemical property, low cost, bright color, strong coloring power and convenient color matching. The results show that azo compounds can be metabolized to form mutagenic precursor aromatic amines in vivo, and aromatic amines can be further metabolized and activated to form electron-friendly products to form adducts with DNA and RNA, which induce mutation ~ (2). In addition, azo compounds can also be oxidized to produce free radicals, which in turn can be linked to in vivo
