復合酶法制取檸檬皮渣膳食纖維的研究

【摘要】:以檸檬皮渣為原料,使用酶解法制備檸檬膳食纖維。在不同酶制劑用量、酶解時間、酶解溫度和p H值條件下制備檸檬膳食纖維,并測定可溶性膳食纖維(SDF)/不溶性膳食纖維(IDF)比值和理化指標。結(jié)果表明:檸檬皮渣在1%的酶用量,酶解時間12 min,酶解溫度60℃,pH值為6的條件下處理時,得到的檸檬膳食纖維產(chǎn)品SDF/IDF為0.67,總黃酮含量為4.82 mg/100 g,VC含量為247 mg/100 g,白度L*為90.23,黏度為7.57 m Pa·s,產(chǎn)品質(zhì)量較優(yōu)。
[Abstract]:Lemon dietary fiber was prepared by enzymatic hydrolysis of lemon peel dregs. Lemon dietary fiber was prepared under different enzyme dosage, hydrolysis time, enzymatic hydrolysis temperature and pH value, and the ratio of soluble dietary fiber SDF and insoluble dietary fiber (IDF) and physicochemical index were measured.
