響應(yīng)面優(yōu)化高壓均質(zhì)法制備納米竹筍膳食纖維

【摘要】:以大葉麻竹筍為原料,單因素試驗的基礎(chǔ)上,通過響應(yīng)面法對高壓均質(zhì)技術(shù)制備納米竹筍膳食纖維的工藝條件進行優(yōu)化。結(jié)果表明:高壓均質(zhì)法制備納米竹筍膳食纖維的最佳工藝條件為物料濃度2.1%、物料溫度31℃、均質(zhì)壓力33 MPa。在此條件下,納米竹筍膳食纖維得率為83.34%。
