基于介電譜技術(shù)的地溝油檢測(cè)研究

【摘要】:食用植物油是人體重要的營(yíng)養(yǎng)和能量來(lái)源,是重要的食品工業(yè)基礎(chǔ)原料,“民以食為天,食以安為先”,由于我國(guó)食用植物油消費(fèi)量的巨大,,劣質(zhì)食用植物油不僅危害了消費(fèi)者的健康利益,還關(guān)系到社會(huì)的安定。 在食用植物油劣化變質(zhì)過(guò)程中,會(huì)有氧化、水解、聚合等一系列的化學(xué)反應(yīng),極性小分子含量會(huì)發(fā)生變化,即表現(xiàn)為介電常數(shù)的變化。所以,通過(guò)檢測(cè)食用植物油介電常數(shù)的變化,可以判定食用植物油品質(zhì)的好壞。本文首先闡述了食用植物油的品質(zhì)檢測(cè)原理,依據(jù)該原理研究并設(shè)計(jì)了基于電容傳感器和電容檢測(cè)的食用植物油品質(zhì)檢測(cè)系統(tǒng),用3類食用植物油進(jìn)行了初步實(shí)驗(yàn),分別給出了它們?cè)谔囟l件下的品質(zhì)關(guān)系函數(shù)。 食用植物油品質(zhì)檢測(cè)系統(tǒng)設(shè)計(jì)主要有以下三個(gè)方面組成,主要采用數(shù)據(jù)前端傳感器(電容和溫度),分析并設(shè)計(jì)了電容信號(hào)的放大調(diào)理電路以及微控制器外圍接口技術(shù)。該系統(tǒng)以NXP公司的Cortex-M0微處理器為控制核心,采用平板電容傳感器探頭測(cè)量食用植物油的介電常數(shù);測(cè)量時(shí)將傳感器探頭插入樣品油中,激勵(lì)源正弦波信號(hào)由微控制器PWM調(diào)制產(chǎn)生,傳感器輸出電壓信號(hào)經(jīng)傳感器模擬前端(AFE)系統(tǒng)LMP90100送入微控制器;由于在測(cè)量食用植物油電容時(shí),溫度會(huì)對(duì)結(jié)果有一定的干擾,系統(tǒng)設(shè)計(jì)了基于數(shù)字溫度傳感器DS18B20的溫度測(cè)量電路;微控制器與上位機(jī)之間采用RS232通訊,再由計(jì)算機(jī)進(jìn)行數(shù)據(jù)處理、溫度的影響分析、顯示和打印等。 食用植物油品質(zhì)檢測(cè)系統(tǒng)有微處理器程序設(shè)計(jì)與上位機(jī)界面設(shè)計(jì)兩個(gè)方面組成,微處理器程序主要有PWM的正弦調(diào)制算法和外圍器件驅(qū)動(dòng),外圍器件驅(qū)動(dòng)有溫度傳感器18B20的單總線通訊,與模擬前端器件LMP90100的SPI通訊以及與上位機(jī)的串口通訊。上位機(jī)界面采用NI(美國(guó)國(guó)家儀器)的LabVIEW軟件編寫,實(shí)現(xiàn)數(shù)據(jù)記錄與分析;線性回歸的方法,找出待測(cè)樣品的品質(zhì)關(guān)系函數(shù)。 課題完成了食用植物油品質(zhì)檢測(cè)系統(tǒng)的開(kāi)發(fā),并以不同品質(zhì)的食用植物油為對(duì)象,進(jìn)行了初步實(shí)驗(yàn)。實(shí)驗(yàn)結(jié)果表明,具有較好的數(shù)據(jù)重現(xiàn)性,分別建立了葵花籽油、大豆油和調(diào)和油與地溝油含量相關(guān)的數(shù)學(xué)模型。
[Abstract]:Edible vegetable oil is an important source of nutrition and energy for the human body and an important raw material for the food industry. "the people take food as the day, and the food comes first." because of the huge consumption of edible vegetable oil in China, Inferior edible vegetable oil not only endangers the health benefits of consumers, but also relates to social stability. A series of chemical reactions, such as oxidation, hydrolysis and polymerization, will occur during the deterioration of edible vegetable oil, and the content of polar small molecules will change, that is, the change of dielectric constant. Therefore, the quality of edible vegetable oil can be judged by detecting the change of dielectric constant of edible vegetable oil. In this paper, the quality detection principle of edible vegetable oil is first expounded. According to this principle, the quality detection system of edible vegetable oil based on capacitance sensor and capacitance detection is studied and designed, and the preliminary experiment is carried out with three kinds of edible vegetable oil. Their quality relation functions under certain conditions are given respectively. The design of edible vegetable oil quality detection system is mainly composed of the following three aspects: the data front-end sensor (capacitance and temperature) is used to analyze and design the amplifying and conditioning circuit of the capacitor signal and the peripheral interface technology of the microcontroller. In this system, the dielectric constant of edible vegetable oil is measured by using the panel capacitance sensor probe with the Cortex-M0 microprocessor of NXP company as the control core. When the sensor probe is inserted into the sample oil, the exciting source sinusoidal wave signal is modulated by the microcontroller PWM, and the output voltage signal of the sensor is fed into the microcontroller via the sensor analog front-end (AFE) system LMP90100. Because the temperature will interfere with the result when measuring the capacitance of edible vegetable oil, a temperature measuring circuit based on digital temperature sensor DS18B20 is designed. RS232 communication is used between the microcontroller and the host computer, and then the data is processed by the computer, the influence of temperature is analyzed, and the display and print are carried out. The edible vegetable oil quality detection system consists of two aspects: microprocessor program design and upper computer interface design. The microprocessor program mainly includes PWM sinusoidal modulation algorithm and peripheral device driver. The peripheral device drives the single bus communication with the temperature sensor 18B20, the SPI communication with the analog front-end device LMP90100 and the serial port communication with the host computer. The upper computer interface is compiled with the LabVIEW software of NI to record and analyze the data, and the linear regression method is used to find out the quality relation function of the sample to be tested. The quality detection system of edible vegetable oil was developed, and a preliminary experiment was carried out on different quality edible vegetable oil. The experimental results show that there is a good reproducibility of the data. The mathematical models of sunflower oil, soybean oil and blending oil related to the oil content in the gutter are established respectively.
